Ingredients

Coffee & Walnut Cupcakes

  • 175gUnsalted Butter, Softened
  • 175gLight Brown Sugar
  • 3Large Free Range Eggs, beaten
  • 175gSelf Raising Flour
  • 2 tspsStrong Instant Coffee
  • 75gWalnuts, Chopped

Coffee Butter-cream

  • 150gButter
  • 350gIcing Sugar
  • 2tspsStrong Instant Coffee

Decoration

  • 3/4 cupWalnuts, Chopped
  • Sprinkles( easily available in market)

Directions

To make the Cupcakes

  • Preheat your oven to 170C/160CFan and Line a 12 Hole Muffin Tray with Large Cupcake Cases/Muffin Cases
  • Dissolve the 2tsps of Instant Coffee in one tablespoon of boiling water and leave to cool completely.
