Heat a pressure cooker with oil and ghee and temper with bay leaf, cloves, and cardamom. Add sliced onions and saute until transparent. Add the chili, ginger, garlic paste and saute until raw smell goes off. Add chopped tomatoes, salt, chili powder, turmeric powder, biryani masala powder and mix it well. Cook in low medium flame until oil separates from it. Add the cleaned and washed mint and coriander leaves. Add washed basmati rice and mix gently. Add coconut milk and water and adjust the quantity of the salt according to your taste. Pressure cook for 15 min and simmer for 5 min. Switch off the flame and once the pressure releases, fluff it with a fork. Spicy and flavored Tomato Biryani is ready. Serve hot with any raita. Tips: Do not skip mint leaves as it gives a unique flavor. Adding coconut milk gives a rich flavor. You can add a half and a half or skip it if you don't want it.   • 2 cupsBasmati Rice
  • 2 (sliced)Onion
  • 3Tomato
  • 1 1/2 tbsp + 1 1/2 tbspOil / Ghee
  • 1Bay leaf
