Prep Time: 5min Cook time: 20min Ingredients: For The Dough 1 cupwhole wheat flour (gehun ka atta),2 tbspoil,to tastesalt,as requiredwater, For The Filling 1/2 cupyellow moong dal (split yellow gram),1/2 tspcumin seeds (jeera),a pinchturmeric powder (haldi),a pinchasafoetida (hing),1/2 tspchili powder,2 tspoil,to tastesalt,as requiredoil,for rollingwhole wheat flour (gehun ka atta), Instructions: For The Dough In a bowl, add the wheat flour, oil, salt and enough water and knead into a smooth dough and cover it with a cloth and keep it aside. For The filling Wash and soak moong dal in enough water for an hour and then drain the water from the dal and pressure cook the dal with 1 cup of water for25 min and drain the water and keep it aside to cool. Heat the oil in a pan, add the cumin seeds and when the seeds crackle, add the asafoetida and the cooked dal and fry it nicely. Add salt, chili powder, and turmeric powder and mix it well and cook till mixture becomes very dry and keep it aside to cool. How To Proceed Divide the dough into equal portions and roll a portion of the dough into a 100 mm. (4”) diameter circle by using a little whole wheat flour for rolling. Place a portion of the stuffing in the center of the circle and bring together all the sides in the center and seal it tightly. Roll again into a 125 mm. (5”) diameter circle using a little whole wheat flour for rolling. Heat a non-stick tawa (griddle) and cook the paratha by using a little oil and cook till golden brown spots appear on both the sides. Serve it with bottle gourd raita and complete a hearty meal.
