Divide the mixture into equal portions and shape them into small round koftas. Steam in a steamer for about 20 or till the koftas are done and Keep it aside. How to proceed Blend the onions, ginger, and garlic to a smooth paste in a mixer and keep it aside. Blend the tomatoes to a puree in a mixer. Heat a non-stick kadhai on a medium flame and when it is hot, add cumin seeds and dry roast for 10 to 15 seconds. Add tomato puree, turmeric powder, chili powder, garam masala, vegetable stock and salt and cook on a low flame for 10 minutes. Add the koftas and cook for 3 to 4 minutes. Garnish with coriander and serve it hot. Lauki( Bottle Gourd) is generally not a popular vegetable in every household but it makes one of the best Indian curries. Lauki Kofta Curry in which steamed koftas made of grated bottle gourd are cooked in spicy gravy. This dish is low in calorie as no oil is used to make this curry. This goes very well with hot rice or parathas.

Ingredients

For The Lauki Koftas

  • 1/2 cupgrated bottle gourd (doodhi / lauki)
  • 2 tbspbesan (bengal gram flour)
  • 1small sized potato , boiled and mashed
  • 1/2 tspginger-garlic (adrak-lehsun) paste
  • 1/2 tspgreen chili paste
  • 1/2 tspchaat masala
  • saltto taste

Other Ingredients

  • 2roasted onions, roughly chopped
  • 1/2 tspchopped ginger (adrak)
  • 2roasted garlic cloves (laung / lavang), roughly chopped
  • 2tomatoes, blanched and roughly chopped
  • 1/4 tspcumin seeds (jeera)
  • 1/4 tspturmeric powder (haldi)
  • 1 tspchili powder
  • 1/2 tspgaram masala
  • 1-1/2 cupsvegetable stock
  • Saltto taste
  • 2 tbspchopped coriander (dhania) for the garnish

Directions

For the lauki koftas
