Prep Time: Cook time: Ingredients: 300 gramsBitter Gourd (Karela), small & tender, sliced into thin roundels,2 tablespoonsYogurt (Curd,1/4 teaspoonTurmeric powder (Haldi),1 teaspoon Mustard seeds,1-1/2 teaspoonCumin seeds,2Dry red chilies,1Onion, thinly sliced,6Garlic,1sprig Curry leaves,1 teaspoonRed chili powder,1 teaspoonDry mango powder (amchur),1 teaspoonJaggery,Corianderleaves (Dhania), few sprigs, finely chopped, Instructions: In a pressure cooker add bitter gourd along with yogurt, 2 tablespoons water, turmeric powder, and some salt and pressure cook for 5 min and turn off the heat and keep it aside. Heat a tablespoon of oil in a wok or heavy-bottomed pan over medium heat and add mustard seeds, cumin seeds, and dry red chilies and allow them to crackle and let them get roasted well. Once the chilies get roasted and add sliced onion, garlic pods, curry leaves and saute for 2 minutes or until the onions have slightly softened. Add the cooked Kakarakaya (bitter gourd) and stir-fry over medium heat for 8-10 minutes and till the bitter gourd pieces start to turn brown and soft. Once the Kakarakaya (bitter gourd) is cooked well, add red chili powder, amchur powder, jaggery, and salt and cook for another 2 to 3 minutes. Fry over a high flame until you get a nice dark brown color for 3 to 5 minutes. add finely chopped coriander, mix it well and turn off the flame Serve the Andhra Style Kakarakaya Vepudu with hot rice. Kakarakaya( Bitter gourd) fry is a simple bitter gourd stir fry recipe made in Andhra style. Bitter gourd is said to be one of the veggies that regulate blood sugar levels and so it is good to use them occasionally.This goes very well with plain rice.

Ingredients

  • 300 gramsBitter Gourd (Karela), small & tender, sliced into thin roundels
  • 2 tablespoonsYogurt (Curd

  • 1-1/2 teaspoonCumin seeds
  • 2Dry red chilies
  • 1Onion, thinly sliced
