Heat oil in a deep non-stick pan and dip each vegetable strip into the batter and deep-fry in the hot oil and fry few veggies at a time and fry till they turn golden brown in color from all the sides. Drain on an absorbent paper and keep these deep-fried vegetables aside. Heat oil in a non-stick kadhai or a broad non-stick pan on a high flame till it smokes. Add garlic and saute on a high flame for few second and add spring onions and salt and saute on a high flame for 1 minute.   • 3 cupsmixed vegetable strips (capsicum, cauliflower and baby corn)

  • 1 tbspoil for cooking
  • 1 tbspfinely chopped garlic (lehsun)
  • 1/2 cupchopped spring onions (whites and greens)
  • saltto taste
