In a pressure cooker add cumin seeds and add onions and saute till brown in color and slit the green chilies and add it in the pressure cooker. Blend mustard seeds and fennel seeds in a grinder jar.and add to the pressure cooker and mix it well. Add pumpkin pieces, salt, coriander powder, turmeric powder and red chili powder and mix it well. Add a little water and mix it well and add amchur, sugar and melon seeds. Mix it and cover with the lid and cook on low flame for15 min. Remove from flame and let it stand and do not remove the lid, for 4-5 minutes. After 4-5 min open the lid, mash lightly and serve it hot. Kaddu( Pumpkin) Ki Sabzi are loaded with nutrients. This curry is so easy and simple to make and pairs well with roti or rice. The specialty of this curry is that it is cooked on low flame and cooked with its own moisture. Hence the taste and flavor are great. Let’s follow this yummy recipe.  

Ingredients

  • 500 gramsPumpkin
  • 1 tablespoonsMelon seeds (magaz)
