Prep Time: Cook time: Ingredients: 2 cupsthick flattened rice (poha), washed and drained,1/4 cupyellow moong dal (split yellow gram), washed and drained,1 tbspfinely chopped green chilies,1/4 cupfinely chopped spinach (palak),1 tbspfinely chopped coriander (dhania),2 tspsugar,2 tsplemon juice,saltto taste,3 tspoil for greasing and cooking, Instructions: Place the flattened rice in a sieve and hold it under running water for a few second and keep it aside for 2 minutes for the water to drain out completely. Soak moong dal in enough water in a deep bowl for about an hour and drain the water from the moong dal. Blend flattened rice, soaked moong dal, and green chilies to a coarse paste, without using any water. Transfer the mixture into a bowl, add chopped spinach, coriander, sugar, lemon juice and salt and mix it well. Divide the mixture into equal portions and shape each portion into 50 mm. (2”) diameter flat, round cutlet. Heat a non-stick tawa (griddle), grease the tawa with1 tsp of oil, and cook the cutlets using 1 tsp of oil till they turn brown in color from both the sides.
