Diced the onion and puree the tomato and keep it aside and make the paste of ginger and garlic. To Make Lobia Masala Curry In a pan heat oil and add bay leaves, cumin seeds, cinnamon and fry for a min. Add ginger and garlic paste and saute for a min and once ginger and garlic are sauteed add onion and cook for about 2 min or till onion sweats. Add tomato puree and cook it and add turmeric powder, red chili powder, cumin powder, and cook for a min and then add slit green chili. Once all the masala blends well with each other than add the boiled Lobia and stir it well. When the Lobia blends well with masala then add garam masala and salt to this curry and mix it well. Add kasoori methi and mix it well and serve hot. Serve this delicious Lobia masala curry with hot roti or paratha. Lobia is a good source of iron, protein, fiber and folate. Ingredients

  • 1-1/2 cupsLobia/black eye peas
