It is perfect for any occasion Prep Time: 10min Cook time: 20min Ingredients: 1/4 kgGreen brinjals, wash and cut into cubes,1 1/2 tbspOil,1/2 tspcumin seeds,1chopped onion,1chopped tomato,1/2 tspfinely minced ginger,1 tspjaggery (optional),1 tspRed chili powder,2green chili, slit half way,1 tspcoriander powder,1/2 tspsaunf powder/aniseed powder,1 tspcoriander leaves (optional),1 cupbeaten yogurt,Pinch ofgaram masala powder,Pinch ofkasoori methi,To tasteSalt, Instructions: In a bowl add yogurt, chili powder, coriander powder, saunf powder, salt, coriander leaves and green chilies and keep it aside Heat oil in a vessel, add cumin seeds and add crushed ginger and chopped onions and saute for 4-5 min. Add turmeric powder and fry it and add the cubed brinjals and cook on medium flame for 3 min. Cover with the lid and cook on low flame for 15-17 min and keep checking in between and fry to ensure the brinjals don’t burn or stick to the pan. Add the tomatoes and cook for 3 min and add a cup of water and jaggery and cook on a low flame. Cover with a lid and cook on a low flame for 15 min and remove the lid and cook for few min. if it appears still watery. Add the yogurt mixture and mix it nicely and allow the curry to cook till you achieve a thick gravy consistency. Add garam masala powder and kasoori methi and mix well and turn off the flame. Delicious Dahi Baingan( Brinjal cooked in curd gravy) Recipe

Dahi Baingan is a very popular vegetarian dish. This is one of the special dishes that is relished by all. This dish is easy and simply delicious. Serve this dish with plain rice. Follow this recipe.  

Ingredients

  • 1/4 kgGreen brinjals, wash and cut into cubes
  • 1 1/2 tbspOil
  • 1/2 tspcumin seeds
