Peel and slice onion, peel and finely chop the carrot, green chili, spring onion and grated garlic. In a pan heat oil or butter add garlic, broken red chili, green chili and saute until garlic becomes golden brown in color and fry on medium flame, take care not to burn the garlic. Add onion and saute until onion becomes light brown and soft and add carrot, salt, and cook on a medium flame until carrot gets cooked but remains crunchy, add soya sauce and mix it well. Add noodles (rinse again in tap water) and mix it well, add spring onion and mix it again and cook for 3-4 minutes and switch off the flame. Serve hot with manchurian gravy. Notes Butter adds nice buttery flavor to the noodles so you can use butter instead of oil. You can also add other vegetables like beans, cabbage, capsicum etc. Meghna Nath
