Heat oil in a kadhai, add mustard seeds, urad dal and let it splutter and add curry leaves and fry for a min and add green chilies and saute for 2min and add chopped onions and saute well till it is slightly brown in color and add grated carrots. Saute for 2 min then sprinkle little water and cover with a lid and cook till it turns soft. Easy Carrot Poriyal Recipe

Carrot Poriyal is a simple and healthy dry texture South Indian curry prepared using carrots and coconut. This dish is little spicy and yummy dish which can be accompanied with rice. Try this easy recipe for your family.

Ingredients

  • 4 smallsized Carrots
  • 1 mediumsized chopped finely
  • 1 tbspCoconut grated

To Temper:

  • 1 tspOil
  • 1 tspMustard seeds
  • 1/2 tspUrad dal
  • fewCurry leaves
  • 1stilted into half Green Chilies

Directions

  • Wash carrots, remove the outer skin, grate it and keep it aside.
  • Heat oil in a kadhai, add mustard seeds, urad dal and let it splutter and add curry leaves and fry for a min and add green chilies and saute for 2min and add chopped onions and saute well till it is slightly brown in color and add grated carrots.
  • Saute for 2 min then sprinkle little water and cover with a lid and cook till it turns soft.
  • Add required salt and once it becomes dry add grated coconut, give a quick stir and switch off the flame and transfer it to a serving bowl.
  • Serve it hot with sambar rice.
