Heat the pan with ghee and add chana dal, black pepper, cumin seeds, pepper, cashew nuts, mustard seed, curry leaves and allow them to roast and crackle and keep it aside. In a bowl add yogurt and 1 cup of water and mix it nicely and pour this mixture to the flour and use a hand whisk and from a batter and add more water if require and make a thick batter and add the prepared tempering to the batter and mix it well. Add salt ( just a little) and allow the batter to rest for 20-30 minutes and in the meantime, grease the Idli plates with oil and preheat the steamer. Then add 1/2 teaspoon of eno fruit salt and mix the batter till it is light and fluffy. Spoon the batter into the greased plate and steam the Idlis for 15 -20 minutes until done. Ingredients

  • 1 cupYogurt (Curd)
  • 1 cupWhole Wheat flour
  • 1/2 teaspoonEnos fruit salt
  • 1 teaspoonSesame oil, to grease the Idli Plates
