Prep Time: Cook time: Ingredients: 1 cupRice flour,1/4 cupFresh coconut,,1Carrot, grated,1Green Bell Pepper (Capsicum), finely chopped,4sprig Dill leaves, chopped,1/4 cupCabbage, finely chopped,1Onion, finely chopped,1-inchGinger, grated,2Green Chilies, finely chopped,1/4 teaspoonAsafoetida (hing),Saltto taste,1/2 teaspoonCumin seeds,1 teaspoonJaggery, grated,to cookCooking oil, Instructions: In a bowl add 4-5 tablespoons of warm water, onions, jaggery, cumin, and asafoetida and leave for 5-8 min. In a bowl sift the rice flour and keep it aside and in a blender add coconut, ginger, chilies, and a little water and blend to a coarse paste. Add all the vegetables and blend again to a slightly runny paste( this paste should be approx. 1 cup). In a bowl add the blended paste, salt, jaggery-cumin water and mix it well, add the rice flour a little at a time and make a smooth dough (the water in the masala paste provides adequate moisture) and add little warm water if required. Once the dough comes to shape and add oil over the dough and cover with a lid and keep it aside for 10-15 min. Wet a muslin cloth with water or grease a plantain leaf with oil and place a portion of the dough on the cloth or leaf to make circular discs. Make a small hole in the center of the roti for even cooking and preheat a skillet over medium heat and grease the skillet with oil. Peel out the cloth or the leaf from the roti and carefully place the roti onto the skillet and cook the roti on medium to low flame. Drizzle a teaspoon of oil around the roti and cook it on the both sides until brown spots appear. Once it is cooked, switch off the flame and serve it hot with coconut chutney. Meghna Nath
