Prep Time: 15min Cook time: 15min Ingredients: For The Vegetable Stock 1/2 cuproughly chopped cabbage,1/2 cuproughly chopped carrots,1/4 cupchopped celery,2 tbspchopped spring onions,3 to 4cauliflower florets, For The Soup 4 cupsvegetable stock,2 tbspoil,1 tbspfinely chopped garlic (lehsun),1 tbspfinely chopped ginger (adrak),1 tspfinely chopped green chilies,2 tbspfinely chopped cabbage,2 tbspfinely chopped cauliflower,2 tbspfinely chopped capsicum,2 tbspfinely chopped carrots,2 tbspfinely chopped tomatoes,2 tbspfinely chopped mint leaves (phudina),1/2 tbspfinely chopped coriander (dhania),2 tbspcornflour dissolved in 1/2 cup,saltto taste,1 tbspsoya sauce,1/4 tspblack peppercorns (kalimirch) powder, For The Topping friednoodles (see the notes below), Instructions: For the vegetable stock Heat 6 cups of water in a kadhai, add all the vegetables and boil on a medium flame for 15 to 20 minutes. Allow the vegetables to settle at the bottom of the vessel and pour out the stock and discard the vegetables and keep the stock aside. For the soup Heat the oil in a wok / kadhai on a high flame till it smokes and add the garlic, ginger and green chilies and fry on a high flame for a few seconds. Add the cabbage, cauliflower, capsicum, carrots and fry on a high flame for 1 to 2 minutes. Add the tomatoes, mint leaves and coriander, mix well and fry on a high flame for 1 minute. Add the prepared vegetable stock, mix it well and cook on a high flame for 2 to 3 minutes and stir occasionally. Add the salt, soya sauce, mix it well and cook on a high flame for another 2 minutes, and stir occasionally. Add the prepared cornflour-water mixture, mix it well and cook on a high flame for 2 to 3and stir continuously. Add the pepper powder and mix it well and top with fried noodles and serve it. Notes For fried Noodles In a pan boil the noodles in enough water and drain the water and deep fry noodles, spread boiled noodles uniformly in hot oil and fry till crisp and golden brown in color and drain on absorbent paper to discard off excess oil. Ingredients

For The Vegetable Stock

  • 1/2 cuproughly chopped cabbage
  • 1/2 cuproughly chopped carrots
  • 1/4 cupchopped celery
  • 2 tbspchopped spring onions
  • 3 to 4cauliflower florets
  • For The Soup

    • 4 cupsvegetable stock
    • 2 tbspoil
    • 1 tbspfinely chopped garlic (lehsun)
    • 1 tbspfinely chopped ginger (adrak)
    • 1 tspfinely chopped green chilies
    • 2 tbspfinely chopped cabbage
    • 2 tbspfinely chopped cauliflower
    • 2 tbspfinely chopped capsicum
    • 2 tbspfinely chopped carrots
    • 2 tbspfinely chopped tomatoes
    • 2 tbspfinely chopped mint leaves (phudina)
    • 1/2 tbspfinely chopped coriander (dhania)
    • 2 tbspcornflour dissolved in 1/2 cup
    • saltto taste
    • 1 tbspsoya sauce
    • 1/4 tspblack peppercorns (kalimirch) powder

    For The Topping

    • friednoodles (see the notes below)

Directions

For the vegetable stock

  • Heat 6 cups of water in a kadhai, add all the vegetables and boil on a medium flame for 15 to 20 minutes.

  • Add the prepared vegetable stock, mix it well and cook on a high flame for 2 to 3 minutes and stir occasionally.
  • Add the salt, soya sauce, mix it well and cook on a high flame for another 2 minutes, and stir occasionally.
  • Add the prepared cornflour-water mixture, mix it well and cook on a high flame for 2 to 3and stir continuously.
  • Add the pepper powder and mix it well and top with fried noodles and serve it.

Notes

For fried Noodles
