Heat oil in a non-stick kadhai and add the coarsely ground spice masala and add the onions and fry till golden brown in color. Add ginger-garlic-green chili paste and fry for one minute and add beans, carrot, cauliflower, peas and mix it and cover it with lid and cook on a low flame and sprinkle a little water if necessary. Add turmeric powder, coriander powder, and red chili powder and stir continuously. Add tomatoes, salt and half a cup of water and cook till the vegetables are tender and the water has dried up. Add capsicums and salt and cook for 4-5 min on a low flame and sprinkle garam masala powder and mix it well and switch off the flame Garnish with ginger strips and coriander leaves and serve it hot with roti. Directions
