For the stuffing In a bowl add grated cabbage and sprinkle a little salt over the cabbage and keep it aside for 10 minutes. Squeeze out the water from the cabbage, add the paneer, coriander, green chilies and salt and mix it well. Divide the stuffing into equal portions and keep it aside. How to proceed In blender add mint leaves, coriander leaves, green chili, lemon juice, and salt and blend to a smooth paste and keep it aside. Place a portion of the stuffing in the center of the circle, bring together all the sides in the center and seal tightly. Roll out again into a 150 mm. (6") diameter circle by using a little whole wheat flour. Heat a non-stick tawa (griddle) and cook the paratha by using ¼ tsp of oil and cook till golden brown spots appear on both the sides. Serve this yummy paratha with mixed vegetable raita and enjoy a hearty meal.
