Prep Time: Cook time: Ingredients: 1 cupchole ( white chickpeas, kabuli chana),2potatoes (peeled and chopped in 1-inch size),4-5green chilies chopped,1 tspginger paste,1 tspgarlic paste,1onion thinly chopped,4tomatoes puree,1 tspdry Pomegranate seeds (anardana),1/2 tspcumin seeds,1/2 tspred chili powder,1/2 tspturmeric powder,1/2 tspdry mango powder,1 tspgaram masala powder,for cookingVegetable oil,Freshcilantro, chopped for garnish,Saltto taste, Instructions: Wash the chole in water and then soak the chole in a bowl with enough water and soak it for overnight.(if you have less time then you can soak it for 8-10 hours). Next day, in a pressure cooker, add the chole, 4 cups of water, and a little salt and pressure cook for 25 min and switch off the flame. Drain the water from the boiled chole and reserve water(stock) aside for later use. Heat sufficient oil in a pan and deep fry the pieces of potatoes and drain it on a tissue paper and keep it aside. Heat the oil in a pan and add cumin seeds, green chili, ginger, and garlic and fry until the raw smell goes away. Add the chopped onion and fry until onion is soft and also add the boiled chole and fried potatoes. Add the tomato puree, salt, red chili powder and turmeric powder and mix it well and cover the pan with the lid and cook it for 5-6 min on a low flame. Add anardana, dry mango powder and garam masala powder and add the reserved water and cook for 2-3 more minutes and switch off the flame and transfer it to a serving dish.
