Heat the oil in a non-stick pan, add the cumin seeds and fry and when the seeds crackle, add the onion, ginger, and garlic and fry till the onion is golden brown and add the tomatoes and cook for 5 minutes. Add the chole masala, chili powder, amchur, turmeric powder, coriander powder, cumin seed powder and salt and fry for a minute. Add the boiled kabuli chana and ½ cup of water and mix it well and cook on a low flame for 10 minutes. Switch off the flame and transfer it to a bowl and serve it hot with puri. Ingredients

  • 1 cupkabuli chana (white chickpeas), soaked overnight
  • 1/2 tspcumin seeds (jeera)
  • 1/3 cupfinely chopped onions
  • 12 mm. (½")piece of ginger (adrak), grated
  • 2cloves of garlic (lehsun), grated
  • 1/2 cupchopped tomatoes
  • 2 tspchole masala (easily available in the market)
