In a kadhai/wok, add the required oil and shallow fry the tofu cubes till they turn brown from both the sides and drain it on a tissue paper and keep it aside. In a kadhai, add oil and add chopped garlic and fry for 30 seconds and add chopped spring onion and fry till the onion turns pinkish. Add ginger garlic paste and mix it well and add capsicum, carrot, and mushroom and fry it nicely. Now add the soya sauce and mix it well and add salt ( remember that salt was already been added to rice while cooking, so add according to it). Add the fried tofu cubes and gently mix it and then add the rice, toss it and cook for 2-3 min and switch off the flame. Garnish with chopped spring onion greens and serve it with a fresh bowl curd.
