Prep Time: 15min Cook time: 10min Ingredients: For The Achari Marinate 1 1/4 cupspaneer (cottage cheese) cubes,1 tbspoil,1 tspmustard seeds (rai/ sarson),1/2 tspfenugreek (methi) seeds,1 tspcumin seeds (jeera),1 tspnigella seeds (kalonji),1 tspfennel seeds (saunf),1/4 tspturmeric powder (haldi),1 tspchili powder,1/2 cupwhisked curd (dahi),1 tbspready made green chili pickle ( easily available at the market),saltto taste, Other Ingredients 3 cupscooked rice (chawal) (in a deep pan add water and rice and once done, drain the water and keep it aside),1 tbspoil,1 to 2cinnamon (dalchini) sticks,2cloves (laung/ lavang),1/2 tspcaraway seeds (shah jeera),2cardamoms,saltto taste, For The Garnish 1 tbspfinely chopped coriander (dhania), Instructions: For the Achari paneer Heat the oil in a kadhai, add the mustard seeds, fenugreek seeds, cumin seeds, nigella seeds and fennel seeds. When the seeds crackle, add the turmeric powder, chili powder and switch off the flame, transfer this mixture in a bowl and add the curd and mix it well. Add the green chili pickle and salt and mix it well and add the paneer cubes, mix it gently and marinate for 30 minutes. How to proceed Heat the oil in a non-stick pan, add the cinnamon, cloves, caraway seeds and cardamom and when the caraway seeds crackle, add the cooked rice and salt, mix it well and cook on medium flame for 1 minute and stir continuously. Add the marinated paneer, mix it well and cook on a medium flame for 1 to 2 minutes and stir occasionally and switch off the flame and garnish with coriander leaves. Ingredients

For The Achari Marinate

  • 1 1/4 cupspaneer (cottage cheese) cubes
  • 1 tbspoil
  • 1 tspmustard seeds (rai/ sarson)
  • 1/2 tspfenugreek (methi) seeds
  • 1 tspcumin seeds (jeera)
  • 1 tspnigella seeds (kalonji)
  • 1 tspfennel seeds (saunf)
  • 1/4 tspturmeric powder (haldi)
  • 1 tspchili powder
  • 1/2 cupwhisked curd (dahi)
  • 1 tbspready made green chili pickle ( easily available at the market)

    • 3 cupscooked rice (chawal) (in a deep pan add water and rice and once done, drain the water and keep it aside)
    • 1 tbspoil
    • 1 to 2cinnamon (dalchini) sticks
    • 2cloves (laung/ lavang)
    • 1/2 tspcaraway seeds (shah jeera)
    • 2cardamoms
    • saltto taste

    For The Garnish

    • 1 tbspfinely chopped coriander (dhania)

Directions

For the Achari paneer

  • Heat the oil in a kadhai, add the mustard seeds, fenugreek seeds, cumin seeds, nigella seeds and fennel seeds.
  • When the seeds crackle, add the turmeric powder, chili powder and switch off the flame, transfer this mixture in a bowl and add the curd and mix it well.
  • Add the green chili pickle and salt and mix it well and add the paneer cubes, mix it gently and marinate for 30 minutes.

How to proceed

  • Heat the oil in a non-stick pan, add the cinnamon, cloves, caraway seeds and cardamom and when the caraway seeds crackle, add the cooked rice and salt, mix it well and cook on medium flame for 1 minute and stir continuously.
  • Add the marinated paneer, mix it well and cook on a medium flame for 1 to 2 minutes and stir occasionally and switch off the flame and garnish with coriander leaves.
  • Serve it with fresh salad and relish a wonderful meal.
