Heat the ghee in a deep non-stick pan, add the garlic paste and fry on a medium flame for a few seconds. Add the capsicum, coriander- dry red chili powder, green chilies and ginger and fry on a medium flame for 1 minute. Add the chopped tomatoes, mix it well and cook on a medium flame for 5 minutes and stir occasionally. Add the dried fenugreek leaves, salt and ¼ cup of water, mix it well and cook on a medium flame for 1 minute and stir occasionally. Add the paneer cubes, mix it gently and cook on a medium flame for 2 to 3 minutes and stir occasionally and switch off the flame. Garnish with coriander leaves and serve it hot with paratha.
