Divide the dough into equal portions and roll each portion into a 125 mm. (6”) diameter circle using a little plain flour for rolling. Heat a non-stick tawa (griddle) and cook each roti by using a little oil and fry till golden brown spots appear on both the sides and keep it aside. For masala water mixture In a bowl, add water, chili powder, mango powder, garam masala, salt and mix it nicely and keep it aside. For the potato rolls In a bowl, add potatoes, grated cheese, green chilies, garam masala, chopped green chilies, lemon juice, salt, and mix it well. Divide the mixture into equal portions and roll each portion into a cylindrical roll. Heat the oil in a deep non-stick kadhai and deep-fry, 3 rolls at a time and fry till they turn golden brown in color from all the sides and keep it aside. For Onion Masala Mixture In a bowl, add chopped onion, chili powder, dried mango powder, and salt and mix it nicely and keep it aside. How to proceed Place a roti on a clean, dry surface and drizzle a little masala water evenly over it. Directions

For the rotis

  • In a bowl, add plain flour, oil, salt, and enough water and knead into a soft dough.
