Once done, switch off the flame and drain the water from it and keep it aside. Heat oil in a large wok or kadai; add chopped onions, whites of green onions, ginger, garlic, green chilies and red chilies (cut up) and fry for a few minutes till the onions turn soft, on high flame. Add the chopped mushrooms and fry again till the mushrooms are well sauteed and also add carrots and chopped bell pepper and fry it again for a few seconds. Add the cooked rice, soya sauce, vinegar, 1/2 teaspoon of black pepper powder and salt and mix it well on a high flame and cook for few min. Once done, switch off the flame and garnish with chopped green onions and serve it hot.
