Once done, drain on a tissue paper and keep it aside. In a non-stick pan, add the coconut and fry on a medium flame for 2 minutes and transfer it on a plate and keep it aside. In the small non-stick pan, add the coriander seeds, cumin seeds, sesame seeds, star anise and cinnamon and fry on a medium flame for 1 minute. Combine all the sauteed ingredients along with the curry leaves and ¼ cup of water in a blender and blend till smooth and keep it aside. How to proceed Heat the oil in a deep non-stick pan, add the cloves, bay leaf, cardamom and peppercorn and fry on a medium flame for 30 seconds. Add the brinjal and fry on a medium flame for 4 minutes. Add the prepared paste and 2 tbsp water and fry on a medium flame for 1 minute, and stir continuously. Add the chili powder, turmeric powder, garlic paste, ginger paste, salt and 5 tbsp of water, mix it well and cook on a medium flame for 1 minute. Add the rice and coriander, mix it gently and cook on a medium flame for 2 minutes and stir occasionally and once done, switch off the flame and serve it hot with any raita of your choice.

Ingredients

For The Paste

  • 1 tbspOil
  • 1/2 cupFinely chopped onions

  • 1/4 tspGinger (adrak) paste
  • Saltto taste

Directions

For the paste
