Chop the onions, garlic, and ginger finely and slit the green chili. In a pan add oil and add chopped onions, green chili, garlic and ginger and when they are slightly brown in color add cashew nut and saute it for a minute. Add the veggies (corn, capsicum, peas and carrot) and saute this for 2 minutes in a high flame and add the soya sauce. Add schezwan sauce if you are adding and or else skip that step and move on to the next. Cut the pineapple into small cubes and add it to the pan and mix it well. Cook on a medium low flame for 5 minutes and switch off the flame. Garnish with spring onion greens. Serve it hot with manchurian gravy. Notes: 1. If the pineapple is too sour, then add the spices accordingly. 2. You can add few raisins while adding the cashew nuts.3. Always use firm ripe pineapple. 4.
