Prep Time: Cook time: Ingredients: 1/2 cupfine sooji/ rava (semolina),1/2 cupBesan (Bengal gram flour),1/2 cupwhole wheat flour,1 tspchili flakes,1/2 tspsalt,1/8 tspasafoetida,1/4 cupmint leaves/pudina (finely chopped),2 Tbspoil (canola or vegetable oil),1/2 cupluke warm water (Approximately),1/4 cupwhole wheat flour (for rolling the paratha),3 Tbspoil- (for cooking the parathas), Instructions: In a bowl add sooji, besan, whole wheat flour, salt chili flakes, asafoetida, chopped mint leaves, and oil, mix it well. Add water as needed to make the soft dough and knead the dough for a minute and keep it aside for 15 minutes. (dough will absorb the water and will become firm) Divide the dough into equal portions and roll them into smooth balls and then roll them into four-inch diameter, spread about 3-4 drops of oil and fold it again and put 2-3 drops of oil and fold into a triangle. Lightly flour the surface and roll it into about 5-inch diameter. Heat the flat skillet on medium high and to check if the skillet is ready, put few drops of water on it and if the water sizzles right away, then the skillet is ready. Place the Paratha over the skillet and when it is slightly brown in color and the paratha will puff in different places and then flip it. Brush some oil and flip it and again brush some oil Lightly press the paratha with a spatula and press with a spatula and fry till brown from both the side. Serve this paratha with any side dish and enjoy your morning breakfast. Note: If the paratha is sticking while rolling then sprinkle little more flour this will help to roll the paratha easily.
