Add salt, mix it well and cover the bowl with lid and keep it aside to ferment for 4 to 5 hours or for overnight and keep it in a warm place. Add all the vegetables, coriander leaves, and crushed black peppercorns to the fermented batter and mix it well. Heat sufficient water in an idli steamer and lightly grease the idli molds with oil and pour a spoonful of batter into each mold. Place the idli mold in the steamer and steam for 10-15 minutes and after it cooked, de-mold it and serve it hot with sambar.
