Prep Time: Cook time: Ingredients: 4 cupsroughly chopped tomatoes,1/2 cupfrench beans , cut into 1” pieces,1/2 cupcluster beans (gavarfali) , cut into 1” pieces,1/2 cupdrumsticks (saijan ki phalli / saragvo) , cut into 2” pieces,1/2 cuppeeled potato cubes,2 tbspoil,1 tspmustard seeds ( rai / sarson),1 tspcumin seeds (jeera),2pinches of asafoetida (hing),1/4 cupbesan (Bengal gram flour),5curry leaves (kadi patta),saltto taste,2 tspginger-green chili paste,3/4 cuplady finger (Bhindi), cut into 25 mm. (1”) pieces,1/2 tspsugar,1/2 tspgaram masala, Instructions: In a deep pan add the tomatoes and 2 cups of water and cook on a medium flame for 8 to 10 minutes or cook till the tomatoes are soft. Switch off the flame and once slightly cooled, blend the tomatoes to a smooth pulp and keep it aside. Heat 2 cups of water in a deep kadhai, add the french beans, cluster beans and drumsticks, mix it well and cook on a medium flame for 5 minutes. Add the potatoes, mix well and cook on a medium flame for 5 to 7 minutes and do not drain the water from the vegetables and keep it aside. Heat the oil in a kadhai and add the mustard seeds and cumin seeds and when the seeds crackle, add the asafoetida and besan and fry on a medium flame for 1 to 2 minutes. Add the curry leaves, prepared tomato pulp and all the boiled vegetables (including the water), mix it well and cook on a medium flame for another 5 to 7 minutes and stir occasionally. Add the salt, ginger-green chili paste and lady finger, mix it well cook on a medium flame for 5 to 7 minutes and stir occasionally. Ingredients

  • 4 cupsroughly chopped tomatoes
  • 1/2 cupfrench beans , cut into 1” pieces
  • 1/2 cupcluster beans (gavarfali) , cut into 1” pieces
