It is best for any occasion Prep Time: 15min Cook time: 20min Ingredients: For The Spinach Koftas 3/4 cupblanched and chopped spinach (palak),1/4 cupbesan (gram flour),saltto taste,1/2 tspcumin seeds (jeera),1/2 tspchili powder,a pinchsoda bi-carbonate,oilfor deep-frying, For The Kadhi 1 cupwhisked curds (dahi),2 tbspbesan (gram flour),1 tspcumin seeds (jeera),a pinchasafoetida (hing),6curry leaves (kadi patta),1 tspfinely chopped garlic (lehsun),1/2 cupthinly sliced onions,saltto taste,1 tspginger-green chili paste,1 tbspoil,1/4 tspturmeric powder (haldi) Instructions: For the spinach koftas In a bowl, spinach, besan,salt, cumin seeds, chili powder and soda bi-carbonate and mix it well. Divide the mixture into equal portions and shape into even-sized balls. Heat the oil in a deep-kadhai and deep fry 4-5 koftas at a time till they are golden brown in color from all the sides. Once done, drain on an absorbent paper and keep it aside. For the kadhi In a bowl, add curd, besan ½ cup of water in a bowl and whisk it well till no lumps remain. Add more ½ cup of water and whisk it nicely and keep it aside. Heat the oil in a kadhai and add the cumin seeds and when the seeds crackle, add the asafoetida, curry leaves and fry a few minutes. Add the garlic and onions and fry on a medium flame for 2 to 3 minutes and add the curd-besan mixture, salt, ginger - green chili paste and turmeric powder, mix it well and cook on a medium flame for 3 to 4 minutes and stir continuously. Ingredients

For The Spinach Koftas

  • 3/4 cupblanched and chopped spinach (palak)
  • 1/4 cupbesan (gram flour)
  • saltto taste
  • 1/2 tspcumin seeds (jeera)
