Boil the green peas, dry roast the peanuts and chop the onions, green chilies, and ginger. Heat oil in a heavy bottomed vessel, add mustard seeds, asafoetida, and curry leaves, and allow the mustard seeds to splutter. Add the chopped onions, ginger, green chili, and curry leaves and saute for 5-6 min. Add softened red poha, boiled green peas and salt and mix it well and cover with a lid and allow to cook for 8-10 min. Add grated fresh coconut and mix it well and turn off the flame and add lemon juice and mix it again. Garnish with coriander leaves and serve it warm. Tips You can add cumin seeds and urad dal at the time of tempering. Vegetables like grated carrot, finely chopped beans, and boiled potatoes can also be added. Ingredients

  • 2 cupsRed rice poha (red rice flakes/ flattened rice)
  • 1Onion medium size, finely chopped
  • 2Green chilies finely chopped
  • 1/2"Ginger finely minced
  • 2 tbspPeanuts roasted
  • 1/4 cupGreen peas boiled (optional)
  • 2 tbspCoconut freshly grated
  • 2 tbspCoriander leaves finely chopped
  • 1-1/2 tbspOil
  • saltto taste
  • 1-1/2 tbspLemon juice (optional)

Directions
