Prep Time: 15min Cook time: 25min Ingredients: small headCauliflower florets,2 smallPotato,2Carrot,1 tablespoonGreen peas,1Tomatoes,1Onions,pinchTurmeric powder,Saltto taste,lemon sizeTamarind,½ cupTur dal,½ teaspoonMustard seeds,5 leavesCurry leaves,2 tablespoonsOil,2Red chilies,10Black pepper corns,1 tablespoonCoriander seeds,1 tablespoonChana dal,¾ tablespoonSplit gram dal,¼ cupFresh coconut grated, Instructions: Soak tamarind in water for about 10 minutes and keep it aside Wash tur dal and add 1 ½ cup of water to it Pressure cook it till they become soft Dry roast dry red chilies, black pepper corns, coriander leaves, chana dal, split gram dal and till you get nice aroma Add grated coconut to the pan and fry it separately Cool the fried ingredients and grind them to a fine powder Place a pan on flame and add oil to it Add mustard seeds and allow it to splutter Add curry leaves to it and saute them for few seconds Add chopped onions and fry them for about 4 minutes on low flame Add turmeric powder and chopped vegetables Fry them for about 10 minutes on low flame and add the prepared masala powder to it Mix it well and add tomatoes Saute the whole stuff for about 6 to 8 minutes and add the cooked tur dal along with green peas to it Add enough salt and cook them for some time Add water to it and cook the ingredients on low flame for about 10 minutes till all the vegetables are cooked three fourth Add tamarind juice at the end and cook for 10 more minutes till the rawness of the tamarind disappears Off the flame and remove it in a serving bowl Serve the cauliflower Kootu with hot rice.
