Prep Time: Cook time: Ingredients: 250 gmChickpea (Chole) soaked & boiled,1-1/2 tbspChole masala (easily available in the market),2 cupsTomato puree,1cupOnion finely chopped,1tbspGinger lengthwise sliced,2 tbspOil,3 piecesCardamom,3 clovesCloves,1 inchCinnamon piece,2 piecesBay leaf,4 tbspTea water,1 tbspAmchur (dried mango powder),2 tbspTamarind (imli) pulp,2 tspRed chili powder,saltto taste,1-1/2 cupsWater for gravy, Instructions: Soak the chana overnight or for about 6 to 7 hrs and boil in the pressure cooker for 25 min and keep it aside. In a small cup soak tamarind and water for about 5 min and keep it aside. In a pan heat water and once the water boils add tea powder and boil for about 4 min and then strain the water and keep it aside. In pan heat oil and add cardamom, cloves, cinnamon and bay leaf and saute for a minute. Add onions and cook till the rawness of onion goes away and once the onions are cooked add tomato puree and cook for about 2 min and add red chili powder and cook till all the ingredients are mixed well. Add boiled chana (chickpea) in the tomato gravy and stir it and cook for about 4 min and add chole masala, amchur powder, and salt to taste. Once all the ingredients mix well then add the tea water to the chole and cook for 5 min as you cook the color of the dish will start getting darker. Add the ginger slices and stir it and add tamarind water and cook for about 5 min Serve Amritsari Chole Masala with hot paratha. NOTES As in this recipe amchur powder and tamarind both have been used and if you want to avoid the tamarind then add a little extra of amchur powder or vice versa.
