Gradually add ice-cold water (approx. 3 tbsp) and knead it well to make a stiff dough and keep it in the refrigerator for 15 minutes. After 15 min, remove from the refrigerator and knead the dough again and divide it into equal portions. Roll out a portion of the dough into a 100 mm. (4”) diameter circle and place the circle into a 75 mm. (3”) diameter tart case and press the circle gently around the sides of the tart case/mold. Prick all over the tarts with the help of a fork and arrange the tarts on a baking tray and bake in a pre-heated oven at 200ºc (400ºf) for approx. 10 to 15 minutes and keep it aside. For the jam filling In a bowl add the cornflour and 1 tbsp of water, mix it well and keep it aside. In a deep non-stick pan add 1/4 cup of water and jam, mix it well and cook on a medium flame for 4 minutes and stir occasionally. Add the cornflour-water mixture, mix it well and cook on a medium flame 3 minutes and stir continuously. Add the chopped apple and chopped pear and mix it well and switch off the flame and keep it aside to cool for 30 minutes.
