This rice dish is made with basmati rice, various veggies, and various Indian spices Prep Time: 15min Cook time: 10min Ingredients: 3 cupscooked long grain basmati rice (chawal),1/4 tspsaffron (kesar) strands,2 tbspghee,2cloves (laung / lavang),2sticks cinnamon (dalchini),3cardamoms (elaichi),1/2 tspcaraway seeds (shah-jeera),1 tspcumin seeds (jeera),1 tspfinely chopped green chillies,1bay leaf (tejpatta),1/2 cupsliced onions,1 tspchili powder,1/2 tspturmeric powder (haldi),2 tbsppaneer (cottage cheese) cubes,1/4 cupblanched cauliflower florets,3/4 cupboiled green peas,2 tbspchopped canned pineapple,saltto taste, For The Garnish 2 tbspfinely chopped coriander (dhania),10-12fried cashew nuts (kaju),10-12fried raisins (kismis), Instructions: In a bowl add saffron and 1 tbsp of warm water , mix it well and keep it aside. Heat the ghee in a deep non-stick pan, add the cloves, cinnamon, cardamom, caraway seeds, cumin seeds, green chillies and bay leaf and fry on a medium flame for a few seconds. Add the onions and fry on a medium flame for 2 to 3 minutes or fry till they turn light brown in color. Add the chili powder, turmeric powder, paneer, cauliflower and green peas and fry on a medium flame for 1 minute. Add the pineapple, cooked rice, saffron-water mixture and salt, mix it well and cook on a medium flame for 2 minutes and stir occasionally. Garnish with coriander, cashew nuts and raisins and serve it hot with raita. Tasty Shahi Pulao Recipe

Shahi Pulao is a Royal (Shahi) Style Rice Recipe. This rice dish is made with basmati rice, various veggies, and various Indian spices. The addition dry paneer, saffron and pineapple give a wonderful flavor and aroma to this dish. This dish is perfect when you have a sudden guest at your home and it can also be served for weekend dinner.

Ingredients

  • 3 cupscooked long grain basmati rice (chawal)
  • 1/4 tspsaffron (kesar) strands
  • 2 tbspghee
  • 2cloves (laung / lavang)
  • 2sticks cinnamon (dalchini)
  • 3cardamoms (elaichi)
  • 1/2 tspcaraway seeds (shah-jeera)
  • 1 tspcumin seeds (jeera)
  • 1 tspfinely chopped green chillies
  • 1bay leaf (tejpatta)
  • 1/2 cupsliced onions
  • 1 tspchili powder
  • 1/2 tspturmeric powder (haldi)
  • 2 tbsppaneer (cottage cheese) cubes
  • 1/4 cupblanched cauliflower florets
  • 3/4 cupboiled green peas
  • 2 tbspchopped canned pineapple
  • saltto taste

For The Garnish

  • 2 tbspfinely chopped coriander (dhania)
  • 10-12fried cashew nuts (kaju)
  • 10-12fried raisins (kismis)

Directions

  • In a bowl add saffron and 1 tbsp of warm water , mix it well and keep it aside.
  • Heat the ghee in a deep non-stick pan, add the cloves, cinnamon, cardamom, caraway seeds, cumin seeds, green chillies and bay leaf and fry on a medium flame for a few seconds.
  • Add the onions and fry on a medium flame for 2 to 3 minutes or fry till they turn light brown in color.
