Prep Time: 15min Cook time: 25min Ingredients: 5Bitter gourd,4 tablespoonsOil,2 tablespoonsSenga pindi / Besan powder,½ teaspoonGaram masala powder,½ teaspoonRed chili powder,Saltto taste,½ teaspoonCoriander powder,finely choppedOnions, Instructions: Place a pan on flame and add oil to it Once the oil gets heated, add chopped onions to and fry them for 2 minutes Add coriander powder, garam masala powder, salt and red chili powder to it Saute them 2 more minutes Add besan powder at the end and fry for 3 minutes Keep it aside and let it cool for sometime Peel off the outer skin of bitter gourd and steam cook for about 5 minutes Once it is cool, slit them length wide in the middle Remove the pulp inside and fill it with stuffing Place a pan on flame and add oil to it Fry the kakarkai till they turn golden brown in color and off the flame Remove them to a serving bowl and serve them with hot rice along with Mango Rasam -Neelima

Bitter Gourd Stuffed Fry Recipe

Kakarkai or Bitter Gourd Stuffed Fry is wonderful dish prepared with bitter gourd, besan, garam masala, red chili powder and salt. Bitter gourd is one of the popular vegetable that has miraculous medicinal properties and is proven to be more beneficial for people with diabetes. Ingredients

  • 5Bitter gourd
  • 4 tablespoonsOil
  • 2 tablespoonsSenga pindi / Besan powder
  • ½ teaspoonGaram masala powder
  • ½ teaspoonRed chili powder
  • Saltto taste
  • ½ teaspoonCoriander powder
  • finely choppedOnions

Directions

  • Place a pan on flame and add oil to it
  • Once the oil gets heated, add chopped onions to and fry them for 2 minutes
  • Add coriander powder, garam masala powder, salt and red chili powder to it
  • Saute them 2 more minutes
  • Add besan powder at the end and fry for 3 minutes
  • Keep it aside and let it cool for sometime
